25 Days of Christmas: Food Edition Episode 4
6:00 AMSo yesterday was an extremely long day for me. I had to be at work early and then we had a work event in the evening. So I got home after 8pm and I was STARVING!! I could have cheated, but instead I cooked the dinner that I had been planing all along. And I'm so glad I did because it was incredibly delicious :)
Roasted sweet potato fries, herb salmon, & roasted brussel sprouts w/ bacon and pomegranate.
Today, I'm going to share with you the recipe for the brussel sprouts. If you like brussels, you HAVE to try this recipe. They were so good. They take a little time because you have to prep them but it's so worth it.
I didn't take any pictures while prepping them because I was too hungry and just wanted to get them done, lol. But this is what they look like when they are done :)
Start by using 1 lb of fresh brussel sprouts. Peel the loose layers off then quarter each one. On baking sheet lined with foil, place brussel sprouts. Drizzle with olive oil, balsamic vinegar, salt, pepper & garlic. Place pieces of bacon over top of the brussels. Roast for about 25 minutes then remove bacon. Crumble it and add back in along with 1/4-1/2 cup pomegranate arils.
Cook for another 5 minutes. ENJOY!!
These were so good!! I could have eaten the entire pan. I didn't but I could have :)

Roasted Brussel Sprouts with Bacon & Pomegranate
1 lb fresh brussel sprouts
6 slices turkey bacon
1/4 to 1/2 cup pomegranate arils
2 tbsp olive oil
2 tbsp balsamic vinegar
salt & pepper to taste
2 garlic cloves
Preheat oven to 350. Prep brussel sprouts by removing loose layers. Place on a foil lined baking sheet. Toss in oil, vinegar, garlic & seasonings. Place turkey bacon on top of brussels. Roast for 25 minutes. Remove bacon. Crumble to pieces and add back to pan along with pomegranate. Bake for 5 more minutes. Remove & serve immediately.
