Good Morning all! We are on day 7 already of this :) WOW!

So I'm going to share with you what I'll be making for dinner tonight.

I have some leftover rice from yesterday so I've been brainstorming how to use it. I'm going to pick up a rotisserie chicken today from Sam's Club and I have some broccoli at home. Sounds like it could turn in to something good right? ABSOLUTELY!!!

The Fixate book has a recipe for Broccoli & Chicken Mac & Cheese that I was planning on making tonight, so I'm going to just use rice instead of the pasta. And tweak it a little bit for my liking :)


Chicken & Broccoli Cheesy Rice Bake

3 Cups cooked rice, brown would be best but white works ok too if you don't have brown.
2 tsp butter
2 tbsp unbleached whole wheat flour
1.5 cups unsweetened almond milk
1.25 cups extra sharp cheddar cheese, shredded, 1./4 cup separate
3 cups cooked chicken
4 cups broccoli florets, steamed
1 tsp salt
1/2 tsp ground black pepper

In medium/large saucepan, heat butter till melted over medium heat. Whisk in flour, cook down for one minute. Slowly whisk in milk constantly stirring until thick and no lumps are left. Reduce to low and add cheese. Cook till melted and completely combined. Add in rice, chicken & broccoli. Pour in to prepared baking dish. Sprinkle top with cheese. Bake at 350 for 20-25 minutes or until top is golden brown. Serve immediately!
