We are only 17 days from Christmas people!! Which also so happens to mean we have just 17 days left of our P90X giveaway, so make sure you are sharing with all your friends and family.

Our work Christmas party is today, so cooking is not on the agenda unfortunately. I'll be eating leftovers for lunch and whatever is at the party tonight for dinner (I'm saving up my container count for it, mostly, lol)

But I still want to share a recipe with you all. This is one of my families ALL TIME FAVORITE recipes. I can't remember when the first time was that my mom made this but it had been a go to meal ever since. Now, it's not necessarily healthy, but there are ways of making it healthier so a way you can cut down on some calories is to use turkey bacon & half of the milk it calls for and replace the other half with fat free, low sodium chicken broth. It still tastes great when you do this too! My mom had made it this way for a while now to help stretch it too.

Oh, and you may just want to go ahead and make a double batch, because it probably won't last long. LOL :)

Colby Corn Chowder
6 large potatoes, peeled & cubed (my mom had actually used the canned cubed potatoes too when you don't feel like doing the labor of prepping these. You can use yukons, reds, or white, whatever you like best.)
1 tsp salt

1 large onion
1/ 4 cup butter, cubed (you can also use less of this too, but not too much less otherwise you lose the yummy flavor, lol)
2 cans creamed style corn (you have to use the creamed style, you cannot replace with regular. It won't come out the same.)
4 strips of bacon, cooked (I'm pretty sure my mom always used more than this, lol)
3 cups of milk (whole tastes the best and is the creamiest but if you use 2% it's ok. Use half whole and half chicken broth for an even lighter mix.)
8 ounces of Colby cheese, cubed (BEST CHEESE EVER. Don't use any other kind. It will get gritty and nasty. Colby melts in to a ooey gooey amazingness!!!)


Place potatoes in a Dutch oven or large soup kettle; sprinkle with salt and cover with water. Bring to a boil. Reduce heat; cover and simmer until potatoes are tender. 
Meanwhile, in a large skillet, saute onion in butter until tender. Stir in corn and bacon; heat through. Drain potatoes. Add milk; heat through. Stir in corn mixture. Add cheese at the very end. Serve immediately.
